Weekly Recipe: Power Snack Pack

Power Snack Pack

By Rachel Jambois, RD LD

Have you been cruising the grocery store lately and noticed those fancy looking snack packs in the refrigerated section? These products typically come in handy, grab-and-go, individual packages that contain some kind of fruit, nuts, cheese, meat, hard boiled eggs, or crackers. These little packages are often full of great nutrition for snacking, but can be expensive! This recipe will help you recreate these delicious snack trays at home so you can cash in on the nutrition without cashing out your wallet!

The easiest part of this recipe is how quick these snack packs come together. One option is to keep it in a small glass container and store it in the fridge for when I am on the run and need to take some energy with me! The blueberries provide a great source of carbohydrates and fiber, while the cheese and the nuts bring healthy fat and protein to this mid-day bite. Curate and assemble your favorite fruit, unsalted roasted nuts, and low-fat cheese for a nutritious snack on the go!
