Are you ready for the holiday season? You probably have many parties and meals to plan for, but you have no reason to worry when you have this pumpkin bread recipe!
Pumpkin bread is easy to make, delicious and relatively healthy, so you can indulge without guilt.
People often forget that pumpkins have a purpose for more than just fall decorations! They are actually a very healthy food that provides vital antioxidants and vitamins. Additionally, just one cup of pumpkin has 7 grams of fiber and 3 grams of protein.
Chocolate Chip Pumpkin Bread
Makes one loaf
Ingredients:
- 1¾ cups whole-wheat flour
- 1/4 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- ½ tsp. nutmeg
- ½ tsp. cinnamon
- 2 eggs
- 1 cup solid pack pumpkin puree
- ½ cup water
- ½ cup maple syrup
- ½ cup avocado oil or canola oil
- ½ cup mini dark chocolate chips
- ½ cup chopped walnuts (optional)
Directions:
- Preheat oven to 350 degree F. Generously coat a loaf pan with cooking spray.
- Mix whole-wheat flour, baking powder, baking soda, salt, nutmeg and cinnamon in a medium bowl. Whisk eggs, pumpkin, water, syrup and oil, stir until well combined. Add dark chocolate chips and walnuts and stir continuously.
- Spread the batter out into the prepared loaf pan. Bake for 55 to 60 minutes, until the bread has risen and the center springs back when lightly touched.
- Let cool completely in the pan. Run a knife around the edges before turning out and slicing.
