Making salsa with peaches is a fun way to enjoy this healthy fruit during the summer months. Did you know peaches are packed with good-for-you nutrients and vitamins?
You can use peaches is tons of ways, from adding peaches to tacos or salads or even to an egg scramble for breakfast! One of our favorite way to use peaches is to whip up a peach salsa and pair it with whole-grain chips or crackers.
PEACH SALSA
Serves 4
Adapted from: Dinner At The Zoo
INGREDIENTS:
- 2 cups of peaches, diced
- 1/4 cup minced red onion
- 2 tsp. minced jalapeno
- 1/3 cup chopped cilantro
- Juice of one lime
- A Little salt to taste
DIRECTIONS:
Place all ingredients in a bowl and stir to combine. Cover the bowl and refrigerate for at least 30 minutes or up to 1 day. Serve with chips or use as a condiment for chicken or fish.
