Chef Kari’s Pumpkin Bars
Ingredients – Bars:
- 2 cups flour
- 1 3/4 tsp. baking powder
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 4 large eggs
- 1 cup vegetable oil
- 1 1/2 cups sugar
- One 15 oz. can pumpkin puree
Ingredients – Icing:
- 6 oz. cream cheese
- 3 oz. butter
- 1 3/4 cup powdered sugar
- 3/4 tsp. vanilla extract
Directions – Bars:
- Preheat over to 350 degrees.
- Mix together flour, baking powder, baking soda, cinnamon and salt and set aside.
- In a mixing bowl, beat eggs with oil and sugar.
- Add pumpkin puree and mix just until incorporated.
- Add in dry ingredients and mix until smooth.
- Grease a 8 x 10 baking pan and add batter. Bake 20-25 minutes.
Directions – Icing:
- Beat the room temperature butter and cream cheese together.
- Add in powdered sugar and vanilla and mix to smooth.
- Let bars cool to room temperature then top with icing.
- Refrigerate for at least 1 hour, then cut into desired servings.
